VII Hill is crafted on a unique and premium spirit foundation made from sugar beats and distilled with botanicals found through the centuries amongst the Seven Hills of Rome. VII Hills is produced in small batch, copper pot stills and unfiltered. VII Hills doesn’t cut corners, bottling only the heart of the distilled spirit, never filtering, and never re-distilling the inferior head or tail portion of the base spirit. The process results in an aromatic and exceptionally smooth juniper, citrus orange and vanilla note nectar, balanced by a peppery fennel and bay leaf finish.
