Old Tom gets its name from the wooden plaques shaped like “Old Tom” black cats that adorned the outside wall of pubs in 18th Century England…or at least that’s how the story goes. Ours is distilled with native botanicals, cask aged in first-fill bourbon casks and finished with liquorice root and local Irish honey.
