We went to harvest elder flowers by hand in the beautiful gardens of Altaïr in the Dordogne. The distillation was done during the day to preserve all the freshness and the aromas, and to keep their taste and aromatic potential intact. Elderberry, one of the first flowers of spring, is the tree that brightens up the fields, roads and woods edges of our southwest. An old belief assures that an elder tree planted at the corner of your home protects it from lightning… On the nose, its smell is fresh and delicate. The little white flowers are engorged with pollen, which colors our hands yellow when we pluck it. Once in the still, the flower gives us all its fragrance.
