Four Pillars Gin and Santamania Destileria Urbana have a lot in common (our stills, our commitment to the craft of distilling, and to ‘ginnovation’). So they were the obvious choice for the first gin in our collaborative Distiller Series. Cousin Vera’s Gin (Wilma’s transcontinental cousin) brings together our unique styles: a Yarra-style Spanish gin, combining Spanish botanicals and native Australian ones, with a Tempranillo grape spirit base. The aromatics are bright, savoury and clean with a slight citrus spike. Cornicabra olives, fresh rosemary and crushed coriander sit above a solid base of juniper. The savoury notes carry on to the palate and are supported by pine needles, olive leaf and a textural almond note. Unfortunately, this gin is now out of stock...
