Spy Hop Distilled Gin Salal Berry

Gin description

We distill our Spy Hop Gin with local San Juan Island botanicals: wild roses, blackberries, lavender and Madrone bark. To this very local run in our small copper alembic pot still, we add purple salal berries gathered just as they ripen. This adds a lemony-citrusy green note to the finish on the gin. There are so many interesting and delicious cocktails you can make with this gin!
