Gin description

Since the 10th century, distillates of Juniper infused wine were produced by monks. In 1618 the 30 year old war placed an embargo on French Brandy and made grain king. We set out to make a refined historical curiosity using brandy. We begin by distilling fine Northern California grape brandy not for a clear gin, but for ageing in White Oak. We then pair and redistill with the finest herbs selected from our library of 100 to complement the Juniper and Oak. The result is a sublime cross between brandy and gin with a complex yet balanced notes of Juniper, Vanilla, and carefully selected herbs.
