In short, in our Old Tom - New School: Chestnut wood, brandy and juniper are interpreted as 100% Palatine! By a second distillation the fruity aromas of the wine are refined with the juniper wort. In the Palatine Chestnut barrel, the maturity of the palate finally gives off the soft smell of the palate. Fruit, ginger and juniper wort are accompanied by roasted aromas and a touch of caramel. Incredibly dense and complex in taste. Since 2016 we distill the Old Tom - New School in our own distillery, which is connected to our winery. Traditional fires have been handed down over generations and have always been a great passion for our family.
