Our aim from the beginning was to be inspired by our surroundings, using local botanicals to create a gin that is completely unique and embodies the place where it originates. Our Special Edition Simmer Gin is inspired by the magical Shetland 'Simmer Dim' or summer twilight when the sun barely falls below the horizon, seeming like an endless day. Distilled and bottled on Unst, Simmer Gin is a true reflection of the lasting amber skies with an intense orange flavour and a spicy finish, for the perfect warm summer glow. Simmer Gin has an ABV of 49% and is made with seven botanicals including orange peel, orris root powder, liquorice root and caraway seeds as well as more customary juniper berries.
