    Gin description

    Argalà Gin tells the embrace between two long-established traditions: Gin, the international one and Genepy, the local one. It is an Alpine interpretation of a historic drink, with roots so far from our mountains. Gin, naturally, revolves around juniper: the ripe berries, picked by hand, come from wild bushes grown on the sunny side of our valleys. Their flavour reflects the unicity of the Maritime Alps, where perfumes and aromas from the nearby Mediterranean sea are concentrated, before the harvest, by the first mountain cold. Then there are the balsamic and herbal notes of coriander, caraway seeds and pine needles and the sweet notes of almond, elderberries, apricot kernels and acacia flowers. To warm it all, the exotic notes of vanilla and cubeb berries. Finally, to mark the flavour profile and underline the origins of our gin, we add the local Genepy, a breathe of Alpine freshness. Gin production is made through the Cold Compounding technique, using 10 main botanicals and premium alcohol, distilled in a 5-column still from the fermentation of first quality Italian wheat. Every essence is obtained separatedly by infusion in an hydroalcooholic bath, then they are mixed together. The Genepy extraction is made through a particular technique, called “suspension”: in this case the small Genepy flowers are not immersed in a hydroalcoholic solution, but are placed on special racks that are suspended above the solution itself. Everything takes place in airtight containers so that, while evaporating, the alcohol only extracts the aromatic elements, leaving out the bitter components and the colouring: the result is colourless, similar to a distillate. This process, which takes six months to be completed, could be defined as a slow “cold distillation”. When all the components have been blended, begins the aging in tanks followed by the bottling. The lack of filtering ensures the homogeneity and unicity of our Genepy Gin.
