Gin description
With this wonderful new gin we pay homage to our local bard Mr. Wm Shakespeare on the 400th anniversary of his death. Shakespeare was known to fancy his ale and wine but in his days gin was made mainly in Holland and called Genever. It came to the UK in the mid-17th century with the return of British soldiers who learned about “Dutch Courage” during the Thirty Years’ War. Gin back then was made mainly with malt spirit which was redistilled and flavoured with botanicals, primarily juniper (Genever in Dutch, hence the name). Since we make beautiful malt spirit for our whisky, we thought it would be great fun to try our hand at an old-fashioned Genever recipe, in honour of our famous 17th century neighbour! We redistill our malt whisky spirit in our bespoke Holstein pot still, combining it with juniper, coriander, cassia, nutmeg, orange peel and a few other secret botanicals. We then age it in specially toasted and recharred wine casks, in which it mellows and develops wonderful notes of wood and fruit.
