Dyfi Hibernation Gin

Gin description

Hibernation Gin will be first released produced in winter 2016, and is one of our later distillations of the year. This is when Dyfi provides us with autumn fruits such as wild crab apples and lingonberries. We combine these with carefully selected classic, and other locally-foraged botanicals, and precision-distil with a combinaiton of our own pure spring water and grain spirit, before an early over-wintering in a rare White Port cask. Each bottle is hand signed and lot numbered, recognising extremely limited production.
