After the distillation process, our strong character KUNSTWERK London Dry Gin is lovingly refined with sugar. The result is a sweet, full-bodied and round taste that is not too sweet and delights the senses. In the 18th century in England, gin production was strictly regulated. As a result, there were many moonshine distilleries and sales had to take place in secret. Pub owners resorted to a clever method of discreetly alerting their patrons to the sale. They fixed wooden statues in the shape of black cats in front of the doors of their pubs. This subtle sign was known to the initiated and signaled that gin was secretly being served here. It was sweetened to mask unpleasant flavors and off-flavors in the gin. Even today, the name Old Tom "cat" is an allusion to this time.
