Santa Ana Gin

Gin description

Santa Ana is a gin from the Philippines made from juniper berries, coriander, angelica root and iris that mingle with Ylang-ylang, Alpinia and the citrus fruits of calamansi (the Filipino lemon). This gin offers notes of citrus fruits, sweet spices, lavender, lemon and pepper. Santa Ana Gin is made by partial vacuum distillation, a technique mastered in the Charente region of France. This technique makes it possible to extract a concentration of botanical aromas without degradation by heat. The more subtle flavors are extracted by vacuum distillation, which strengthen and become more complex towards the end of the distillation. The result of the process is a fragrant and delicious gin using even the most sensitive botanicals, such as ylang-ylang or calamansi.
