Wagging Finger Quercus Rubra Fino is ripened in former Spanish Fino-sherry barrels. On October 28, 2016 these vessels were filled with V2.0 Gin at 65%. At the end of May 2017, the first barrel was emptied and returned to 44% bottle strength. We chose very well for the Fino Sheryy barrels as we were fond of the idea of ​​a Gin on Sherry but we were also aware of the possibility that the wood would dominate the dry fresh Gin within no time. So no PX, no Olorosso, no Amontillado but Fino. The subdued mineral character interspersed with the floral tones gives the Gin a great boost and creates a special transformation. On the nose you first hit a almond-like scent that soon takes place for a more mineral and more silty influence. Underneath, the juniper berries keep in the same taste. Sweet, mineral, gin!
