Old Tom Gin is an older style of gin recipe, traditionally slightly sweeter - bridging the gap between modern ‘London Dry’ gins and older Genevers. Sweetened with liquorice root in the botanical mix for the perception of sweetness and a luscious mouthfeel, the Dodd’s Old Tom is distinctly of the Dodd’s family, with big juniper notes on the nose, followed with citrus and rounded spice notes, especially fennel lingering. On the palate, a big liquorice root sweetness carries the juniper until the citrus notes from lemon and lime peel cut through. The finish is herbal with spiced notes from the black and green cardamom with a mellow fennel finish.
