Gin description
Our Gambit Gin is referred to as a new western dry gin. This is a fitting style of gin as we live out West, but this type of gin is really shooting out the lights even in the East. A new western dry gin differs from traditional London dry gin because new western dry gin has less juniper than London dry and favours more prominent, balanced botanicals. Gambit is a very floral, citrus, and savoury gin. Our recipe includes juniper and anise from northern Italy and Turkey, lemon peels from Florida, chamomile from the UK, cloves and angelica from Asia, and Saskatoon berries and coriander from Saskatchewan. We use our Lucky Bastard vodka as the base and naturally infuse these dried botanicals. The alcohol extracts all the flavours, oils, and essences from the botanicals. This gin “tea” is then put back into the still, two hundred and fifty litres at a time, and distilled once more. As the alcohol vapours rise up, all the flavours meld together to create our wonderful gin spirit. We then chill the spirit down to just above freezing and filter it one more time before it is bottled.
