Gin XII

Gin description

At the heart of the Gin is a small berry with a purplish-blue, plummy color (a slightly powdery, ceruminous layer), the juniper berry. Gin XII is a 100% distilled dry gin made with 5 different distillates: 1 gin distillate with 8 herbs and spices (juniper berries, coriander seeds, sweet almond, thyme, maniguette seeds, angelica roots, Florence iris roots, cardamom seeds). These plants and spices are first macerated in alcohol and then distilled together. 4 distillations of single plants (basil, rosemary, eucalyptus, mint), each of which is macerated in alcohol and then distilled individually. All these distillations are carried out in a column still with copper plates, to develop more balance and finesse in the flavors, and thus extract the aromas that make up the distinctive character of Gin XII.
