Hernö Sipping Gin, cask matured Hernö Gin aged in casks used before to refine other goodies, is a unique project to strengthen the tourism in our region and attract visitors to our little corner of the world. For Hernö Sipping Gin #1.4 we let our classic Hernö Dry Gin mature 21 days on ex 200 liter whisky casks from our friends at High Coast Whisky, the cask has previously been used to mature bourbon. The result? Perfect balance between notes from the cask and the botanicals used to distill the gin. Fruity and peppery nose with green apples. Vanilla and oak, subtle juniper and underlying depth of cassia. Floral and juniper taste develops into barley sweets and oak. Dry mouthfeel and a little warmth. Long lingering figs in the finish, with fresh citrus and pepper. Floral notes return.
