Gin description
The neutral base spirit is made from a blend of wheat and barley and is produced in a column still and distilled four times. The resultant neutral grain spirit plus pure water are used to steep the botanicals for 12 – 24 hours. Then the 5th and final distillation is carried out in a John Dore & Co. 500-liter stainless steel pot still called “Tom Thumb”, with it’s sister “Thumberlina” on stand-by duty. The distillate is left to rest for an undisclosed period of time before being diluted and bottled.
