Old Tom - a spirit once lost to the sands of time, but now well established - this cat has certainly got its cream! This latest interpretation is all about the base. The wacky folk at That Boutique-y Gin Company have searched high and low for the finest selection of spirits to use as a base for their gin; there are some unaged and neutral spirits, some aged spirits, and some spirits that have been aged for rather a long time. Whiskies, rums, vodkas and gins, as well as many other spirits have all gone into the pot, so it is clear that drinking this Old Tom is literally drinking history. The medley of spirits is combined with juniper, coriander, angelica, bitter orange and liquorice and then subtly sweetened with a little cane sugar. A game of hide-and-seek is going on with this nose, but you can pick out the full range of various spirit notes including: smoky whisky, mellow rum, perhaps even the fruitiness of grape? The flavour starts as a tight little ball of sweetness and spice that gradually unravels, revealing notes of orange and nutmeg, cardamom and juniper, along with an array of complex wood notes. The finish has a little cherry and some earthiness from the liquorice, before flavours of marmalade sponge covered in toasted brown sugar.
