Gin description
The main two botanicals - Blackberries and Rosemary have been used in Cloud View Gin and grow locally around the area of "The Cloud" in Congleton, which if you aren't familiar with is a prominent hill on the border between Cheshire and Staffordshire a couple of miles west of the Peak District National Park boundary. At 343 metres in height, it is one of the highest hills in the area. The other Botanicals that make up Cloud View Gin are: Juniper, Coriander seeds, Angelica Root, Orris Root, Liquorice, Cassia Bark & Lemon Peel. The founder Chris Carsons lives moments from the Cloud and often walks up The Cloud with his family. He noticed the various bushes and plants around The Cloud with great fresh produce growing on, which is where the idea for a Gin was born. As a small team we experimented with various crude trials using blackberries and sage which we left to absorb into a Dry Gin, the flavour didn't quite work so we kept experimenting and finally we came up with Blackberries and Rosemary which hit the spot perfectly. We use a Pot Stilled Premium neutral spirit from which we add all the Botanicals and leave to rest then charcoal filter just before bottling.
