Gin description
Created in 2017, our Djinn is made from the triple distillation of our Chardonnay brandy, flavored with plants and berries. The basic white brandy of our "Djinn" is obtained by re-distilling the less qualitative fractions of our previous distillations of Marc and Fine. This step makes it possible to purify the eau-de-vie by increasing its degree to 70%. During several days 7 botanicals, carefully chosen plants and berries, will macerate in the previously obtained white brandy and transmit their characteristics to it. As when creating a perfume, all the difficulty lies in the choice and the dosage of botanicals. It took us almost two years of testing to achieve the right balance. Hundreds of botanicals were tested to retain only seven: two spicy base notes, juniper and coriander, three citrus heart notes, grapefruit, lemon and sansho and two notes of vegetal heads, blackcurrant bud and cardamom. Once the maceration is complete, the eau-de-vie is distilled a third and final time in order to retain only the botanical scent.
